Im looking for buy a good budget data logger. Looking to record.
Afr
Fuel psi
Oil psi
Trans oil psi
Boost psi

I use HPTuners Scanner. In addition to the parameters you listed you will also want to record: engine speed, spark timing, throttle position, vehicle speed, and possibly others. Scanning software that reads PCM data through the OBD port has advantages over a stand-alone data logger. OBD software gives you easy access to all the built-in sensors. The HPTuners interface accepts analog data from sensors you will need for AFR, and fuel press. Don't know what is available for the LT1.

EDIT: The PCM does not drive any of those gauges. You're out of luck as far as recording is go.

Although Aeroforce makes an analog gauge with the capability to provide you with the highest value for each parameter. It will be an expensive setup. http://www.aeroforcetech.com/
